Truffle Oil...A Must Have

Okay for all of you fans of Risotto, you have to try this...Trust me you will love it.

1/2 C Chopped Porcini Mushrooms
1/4 C Chopped Fresh Basil (reserve half for serving)
1/4 C Gorgonzola
1/4 C Chopped Shallots
2 T Truffle Oil
1/4 C Chopped Sun Dried Tomatoes

Prepare risotto.  Saute mushrooms, basil, shallots and tomatoes in truffle oil.  Add risotto, goronzola and gently combine. Add fresh basil to top...Yum-Yum.
